Blackstone Caribbean Jerk Chicken Bites
This easy griddle recipe for Blackstone Caribbean Jerk Chicken Bites is very versatile, you can enjoy them as dinner or meal prep them to use on salads, wraps, tacos, rice bowls, etc!
Heck, even just a high protein snack to keep in the fridge for when you get hungry mid day would be amazing.
How to make Blackstone Caribbean Jerk Chicken Bites
I diced 2 pounds of boneless, skinless chicken thighs but chicken breasts work too.
And marinated them overnight in soy sauce, lime juice, brown sugar, olive oil, garlic, kosher salt, pepper, and Caribbean Jerk seasoning.
I also added some of this Blackstone Island Stir Fry seasoning.

Then preheat your Blackstone or flat top griddle to medium heat.
Add some cooking oil of choice and the seasoned chicken bites.

These will cook pretty quickly, about 8 to 10 minutes.

Just mix them around a bit with your spatulas.

We garnished our Blackstone Caribbean Jerk Chicken Bites with cilantro 🙂
I did not think these needed a dipping sauce, which is surprising because I am usually a saucy girl.
But my son dipped his in ranch.
And we had leftovers the next day on a salad for lunch.

Blackstone Caribbean Jerk Chicken Bites
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- kosher salt, pepper, Caribbean Jerk seasoning blend of choice (I also used Blackstone Island Stir Fry seasoning)
- 6 to 8 cloves garlic minced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- cooking oil of choice
- Optional: cilantro for garnish
Instructions
- Put the chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning (to taste), garlic, olive oil, soy sauce, lime juice, and brown sugar. Massage bag until combined and marinate in fridge for at least an hour, I marinated mine overnight.
- Preheat griddle to medium heat. Add cooking oil and the seasoned chicken. Cook 8 to 10 minutes, mixing with spatulas a few times.
- Serve as dinner garnished with cilantro, or use them in rice bowls, top a salad, use in a chicken wrap or tacos, or as a high protein snack to keep in the fridge.
