Blackstone Cheesy Garlic Herb Zucchini
Blackstone Cheesy Garlic Herb Zucchini is an easy griddle side dish recipe, or make some chicken or steak at the same time for a complete flat top grill dinner.
I used this Kinder’s Garlic and Herb seasoning, but any garlic and herb seasoning blend will work.
This whole recipe is also low carb and keto friendly.
It’s the perfect easy dinner for those nights when you really don’t feel like making dinner 😉
How to make Blackstone Cheesy Garlic Herb Zucchini
First slice 2 medium size zucchini lengthwise into 1/4 inch strips.
You can use a sharp knife or a mandolin if you have one.
Then brush both sides with olive oil.
And sprinkle the Kinder’s seasoning blend over top.
I coated 4 boneless, skinless chicken thighs with olive and the same garlic and herb seasoning as well.
The seasoning I used had plenty of salt included, if yours does not just add a little kosher salt.
Preheat your Blackstone griddle or flat top grill to medium heat for several minutes.
If you are making the chicken also, add some cooking oil of choice and the chicken.
Flip the chicken after 5 to 6 minutes and then add your zucchini along with a little more cooking oil.
The zucchini will cook for only 2 to 3 minutes per side.
Give them a flip using tongs.
And sprinkle some mozzarella cheese over top during the last minute.
I got some cheese on the griddle on purpose for a little crispy cheesy goodness.
Now that is one gorgeous, complete griddle meal right there 🙂

Blackstone Cheesy Garlic Herb Zucchini
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 medium size zucchini
- Optional: 4 boneless, skinless chicken thighs for a complete meal
- olive oil, Kinder's Garlic and Herb seasoning (or any garlic herb seasoning of choice)
- 1 cup shredded mozzarella cheese
- Optional: ranch or Caesar dressing for dipping
Instructions
- Slice the zucchini lengthwise into 1/4 inch strips. I used a mandolin but a sharp knife works too.
- Brush olive oil on both sides of the zucchini strips and season with the garlic and herb seasoning (my seasoning had salt included, you can add salt to your zucchini if needed).Note: I seasoned 4 boneless, skinless chicken thighs with olive oil and the same seasoning blend for a complete meal.
- Preheat the griddle to medium for several minutes. Add more olive oil (or cooking oil of choice) and the zucchini. Cook the zucchini 2 to 3 minutes per side.Note: If you are cooking the chicken too, lay the seasoned chicken on the griddle first with cooking oil, the chicken will take 5 to 6 minutes per side, so add the zucchini after flipping the chicken.
- Sprinkle the mozzarella cheese over top, purposely get some on the griddle to create some crispy cheesy goodness. Remove from the griddle and serve with ranch or Caesar dressing if desired.
