Blackstone Big Boy Smash Burgers

If you live near a Frisch’s Big Boy restaurant, you know… you just know. This is my copycat recipe version of a classic on the flat top griddle… Blackstone Big Boy Smash Burgers.

I even got the jar of Frisch’s Tartar Sauce 🙂

I opted not to put the center bun, so this this is basically a double smashed burger with American cheese, tartar sauce, shredded lettuce, and pickles.

But you could totally add a bun in the center if preferred.

How to make Blackstone Big Boy Smash Burgers

First roll 2 pounds of ground beef into balls.

And get the rest of your ingredients ready because this griddle cook goes mighty fast.

Preheat your Blackstone or flat top griddle to medium high heat… giving plenty of time for it to get super hot.

Then place the balls of ground beef on the griddle, spaced apart… no need for any oil.

Place a piece of parchment paper over each and smash well using a burger press, and with a slight twist.

They should be on the thin side just like this.

Season with kosher salt and pepper (plus a seasoning blend of choice if you’d like) and let them cook for about 2 minutes.

And give them a flip, you can see how excited I was with that gorgeous golden brown crust.

That is what I call “free flavor” right there!

A little more kosher salt and pepper, and top each with a slice of American cheese.

Cover with a lid or melting dome for just about another minute.

You can build your burgers on the griddle or a cutting board.

I toasted the buns on the griddle for a few seconds before turning it off.

Start with a burger patty on the bottom bun, a little tartar sauce, another burger patty, and more tartar sauce.

Shredded lettuce, pickles, and then finish them off with the top bun.

Blackstone Big Boy Smash Burgers is a copycat recipe from Frisch's Big Boy restaurants, smashed burgers on the griddle with tartar sauce!

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • 2 pounds ground beef I used 80/20
  • kosher salt, pepper, seasoning blend of choice
  • 8 slices American cheese
  • 4 burger buns
  • 1/2 cup tartar sauce
  • 3/4 cup shredded lettuce
  • 1/4 cup pickle slices

Instructions
 

  • Roll the ground beef into 8 balls.
  • Preheat griddle to medium-high. Place beef on the Blackstone, spaced apart. Use a burger press to smash each flat and thin, twisting slightly. Sprinkle a little kosher salt, pepper, and seasoning blend on burgers. Flip after 2 minutes with spatulas.
    Note: Place a piece of parchment paper between beef and burger press before smashing to prevent sticking.
  • Sprinkle a little more kosher salt, pepper, and seasoning blend on burgers and top each with a slice of cheese. Cook 1 to 2 more minutes until cheese is melted.
  • Place buns, cut side down, on griddle for 20 seconds to toast them.
  • Assemble each burger with a burger patty on the bottom bun, some tartar sauce, top with another patty, more tartar sauce, lettuce, pickles, and then add the top bun.
