Grilled Chicken Fajitas

This easy Grilled Chicken Fajitas recipe was super healthy and the perfect way to use my new grilling basket.

Fajitas in a restaurant usually come in an oil filled skillet, but these are light and flavorful without all the grease.

Summer grilling recipes that the whole family loves are hard to come by, so this one is a keeper.

There are soooo many great fajita seasoning blends to chose from, I got this flavorful one on Amazon HERE!

How to make Grilled Chicken Fajitas

First slice your veggies and put them into a bowl.

I had two smaller onions, a red bell pepper, and some jalapenos.

Then slice 1 1/2 pounds of chicken breasts and add those to the bowl along with olive oil, fajita seasoning, kosher salt, and pepper.

Toss them until evenly combined.

Then preheat your grill to medium high heat with an open grilling basket.

And carefully transfer the seasoned chicken and veggies into the grill basket.

This will cook for about 15 minutes, tossing it all together several times with tongs.

In between tossing the chicken and veggies, I set out a toppings bar for my family to create their own fajitas.

During the last minute, squeeze some lime on the fajitas.

And grill the tortillas for a few seconds per side.

Ingredients
  

  • 1 1/2 pounds boneless, skinless chicken breasts cut into strips
  • 1 large onion (or 2 small onions) sliced
  • 1 red bell pepper sliced
  • 4 to 5 jalapeno peppers seeded and sliced
  • 2 to 3 tablespoons olive oil
  • 2 tablespoons fajita seasoning blend
  • kosher salt, pepper
  • lime wedges
  • flour tortillas and toppings of choice such as sour cream, lettuce, cheese, hot sauce, salsa

Instructions
 

  • Put the chicken into a bowl along with the sliced onions and peppers, olive oil, fajita seasoning, kosher salt, and pepper. Toss until combined.
  • Preheat your grill to medium high heat with the grill basket on the grill grate (my grill basket is the kind with an open top, picture example in post above, you could also use a cast iron skillet on the grill).
  • Carefully transfer the chicken and veggies to the grill basket. Cook 14 to 16 minutes or until the veggies are cooked how you prefer, use tongs to mix it all together several times.
  • Squeeze some lime wedges over top. Grill the tortillas for a few seconds to warm them slightly. Serve the fajitas in the flour tortillas with toppings such as sour cream, lettuce, cheese, hot sauce, salsa.
