Traeger Brats Peppers and Onions

We wanted one last summer-ish meal on the pellet grill since fall is quickly approaching. We went with this super simple recipe for Traeger Brats Peppers and Onions.

Actually I got a mix of both brats and metts, plus some sweet corn on the cob which was allll cooked on the Traeger pellet grill.

The key to this successful cook is all about timing, to make sure it all comes out perfect in the end.

How to make Traeger Brats Peppers and Onions

First slice your onion, red pepper, yellow pepper, jalapenos, and mince the garlic.

The weather was gorgeous so I took this opportunity to slice and mince outside on the patio.

Why is cooking outside just so much more enjoyable?!

I put the veggies in a bowl and tossed them with olive oil, kosher salt, pepper, and a Cajun seasoning blend that I love.

But really any seasoning blend of choice will be perfect.

Then transferred them to my grill basket on the Traeger pellet grill that was set to 350 degrees.

If you don’t have a grill basket, just a small baking sheet works too.

These will cook on the pellet grill for around 45 minutes.

Toss them a few times with tongs.

Then add the brats (and in our case some metts and corn on the cob too).

I brushed the corn with olive oil and seasoned with kosher salt and pepper.

Let this cook for another 20 minutes.

Equipment

  • Traeger/Pellet Grill

Ingredients
  

  • 1 red bell pepper seeded and sliced
  • 1 yellow bell pepper seeded and sliced
  • 2 jalapeno peppers seeded and sliced
  • 1 onion peeled and sliced
  • 4 to 5 cloves garlic minced
  • olive oil, kosher salt, pepper, seasoning blend of choice
  • 6 brats (or metts)
  • 6 hot dog buns
  • Optional: mustard or spicy mustard

Instructions
 

  • Put the sliced peppers, onion, and garlic in a bowl along with some olive oil, kosher salt, pepper, and seasoning blend of choice. Toss until combined and place them in a grilling basket or on a small baking sheet or oven safe dish.
  • Set the pellet grill to 350 degrees. Put the grilling basket or baking sheet on the grill grate for 40 to 45 minutes, tossing the peppers and onions a few times.
  • Add the brats to the Traeger grill grate, continue cooking the brats and the peppers and onions 20 to 25 more minutes, tossing and turning both a few times.
    Note: I also added some corn on the cob brushed with olive oil, kosher salt, and pepper at the same time as the brats and turned them a few times.
  • Serve the brats on the hot dog buns and top with plenty of peppers and onions and mustard/ spicy mustard if desired.
