Smoked BBQ Pork Potato Skins

Leftover pulled pork is never a bad thing, especially when you can make yummy recipes like smoked BBQ pork potato skins!

I mean, honestly, leftovers after making a smoked barbecue pork shoulder is one of the best bonuses of all time.

And these could be served as an appetizer or party food, but they are hearty enough to be served as a meal.

How to make smoked BBQ pork potato skins

First, we will season the potatoes for the smoker.

Since the main part of the potato that will be eaten is the skin, we want it to be as flavorful as possible.

Coat all sides of 4 russet potatoes with olive oil, kosher salt, pepper, and your favorite BBQ seasoning.

The next stop for these flavorful spuds is the smoker or pellet grill!

Preheat the smoker or pellet grill to 250 degrees.

Then place the potatoes on the grill grate for about 2 1/2 to 3 hours.

Ohh, and flip them halfway through.

I used tongs ’cause these little suckers get hot.

Let the potatoes cool slightly while you gather the other ingredients for this dish.

You’ll need some leftover barbecue pulled pork, barbecue sauce, and shredded cheese.

Cut each potato in half.

Mine were still pretty warm at this point so I let them sit for a few more minutes.

Scoop out as much or as little of the potato as you like.

And feel free to save the potatoes to use for mashed potatoes or potato cakes.

Then sprinkle more barbecue seasoning.

And fill each with the leftover pulled pork, barbecue sauce, and pile on lots of shredded cheese.

Finally sprinkle more barbecue seasoning over top and we are ready to get back on the smoker or pellet grill!

Place them back on the grill grate of your smoker still set to 250 degrees.

They will need about 25 to 30 minutes to warm through and get the cheese nice and melty.

These smoked BBQ pork potato skins are great on their own or with toppings of choice đŸ™‚

A little sprinkle of chives or green onions make them extra pretty.

I also set out some sour cream, pickled jalapenos, and my homemade sweet pickled red onions.

Smoked BBQ Pork Potato Skins is a great appetizer recipe and the perfect way to use leftover pulled pork on the smoker or pellet grill!

Equipment

  • Traeger/Pellet Grill
  • Smoker

Ingredients
  

  • 4 Russet potatoes
  • olive oil, kosher salt, pepper, BBQ seasoning blend
  • 2 cups leftover pulled pork (or chicken)
  • BBQ sauce
  • 2 cups shredded cheese of choice
  • Optional toppings: sour cream, chives, jalapenos, sweet pickled red onions (recipe link in post above)

Instructions
 

  • Put the potatoes on a tray, brush them with olive oil and season well on all sides with kosher salt, pepper, and barbecue seasoning.
  • Set the smoker or pellet grill to 250 degrees and place the potatoes on the grill grate for 2 1/2 to 3 hours, flipping halfway through.
  • Cut the potatoes in half lengthwise and let them cool. Scoop out the center of each potato, leaving as much or as little potato in the skin as desired.
    Note: The scooped out potatoes can be used for mashed potatoes or potato cakes.
  • Season the cut side up of each potato skin with more BBQ seasoning. Fill each potato skin with some leftover pulled pork, a drizzle of barbecue sauce, shredded cheese, and more BBQ seasoning.
  • Place the potato skins back on the smoker still set to 250 degrees for to 25 to 30 minutes or until the cheese is melted.
  • Top with sour cream, chives, jalapenos, and/or sweet pickled red onions if desired.
