Grilled Mediterranean Chicken Salads
This recipe for Grilled Mediterranean Chicken Salads are half homemade, and half using easy store-bought ingredients.
I always say life is all about balance!
We are starting with some healthy grilled chicken with a homemade marinade.
And using some store-bought Mediterranean salad kits with the dressing and toppings all included đŸ™‚
How to make Grilled Mediterranean Chicken Salads
Start with 6 boneless, skinless chicken thighs in a bowl or gallon size plastic bag.
And the ingredients below are for the marinade.
Add a 5.3 ounce container of plain Greek yogurt and some olive oil to the chicken.
Also some minced garlic, lemon juice, kosher salt, pepper, and crushed red pepper flakes.
And either chopped fresh basil, or some dried Italian seasoning.
Mix together and marinate in the fridge for a few hours.
Then preheat your grill to medium heat.
And grill the chicken 10 to 12 minutes total, flipping a few times.
You could even grill the chicken a day or two in advance and refrigerate.
Then use the chicken to top the salad kits on a busy weeknight when you need dinner done ASAP đŸ™‚
For 4 people, you will need 3 to 4 Mediterranean Salad Kits.
Just divide the salad between 4 plates or bowls (or containers if meal prepping).
And add the dressing and topping packets.
Finally add the sliced grilled chicken and more feta if desired (I love my feta and the kits just did not have enough for me).
If meal prepping, put the dressing on the side in 2 ounce cups with lids.

It may not be very Mediterranean-ish, but I also added some dried cranberries to mine.

Grilled Mediterranean Chicken Salads

Ingredients
- 6 boneless, skinless chicken thighs
- 1 5.3 ounce container plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh basil (or 1 tablespoon dried Italian seasoning)
- 5 to 6 cloves garlic minced
- kosher salt, pepper, crushed red pepper flakes
- 3 to 4 Mediterranean salad kits (produce section of grocery store)
- Optional: extra feta cheese crumbles, dried cranberries
Instructions
- Put the chicken in a bowl (or gallon size plastic bag) and add the Greek yogurt, olive oil, lemon juice, basil (or Italian seasoning), garlic, kosher salt, pepper, and crushed red pepper. Toss until the chicken is evenly coated.
- Marinate in the fridge for several hours or over night.
- Preheat the grill to medium for a few minutes. Grill the chicken for 10 to 12 minutes total, flipping a few times.Note: I recommend well oiled grill grates to prevent sticking.
- Let the chicken cool and slice. Assemble the salad kits with the dressing and topping packets. Divide between 4 plates and bowls, add the chicken to the salads and extra feta cheese and/or dried cranberries if using.Meal Prep Option: If meal prepping put the dressing on the side in a 2 ounce dressing cup.
