Chorizo Fried Rice Griddle Recipe
This Chorizo Fried Rice griddle recipe is the perfect fusion of Mexican flavors and hibachi style rice on the Blackstone or flat top grill.
A little spicy from the chorizo and jalapeno, but not overwhelming.
It’s balanced perfectly with a squeeze of lime and some store bought yum yum sauce.
How to make this Chorizo Fried Rice griddle recipe
First make 6 to 8 cups of Jasmine rice, place in the fridge and let it cool for a few hours.
I used my rice maker, but the store bought microwave pouches are quite convenient.
Once cool prepare the rest of your ingredients.
I like to put everything on a tray to easily carry out to the griddle.
To go with the Mexican theme from the chorizo I swapped out traditional peas and carrots for jalapenos and corn.
In place of sriracha I went with regular hot sauce.
First preheat the griddle or flat top grill to medium to medium high for several minutes.
Then add some cooking oil, the cooked and cooled Jasmine rice, 3 eggs, a diced onion, and some diced jalapeno peppers.
Cook this for 3 to 4 minutes, mixing together with hibachi spatulas.
Then add the ground chorizo sausage to an empty side of the griddle.
And add the corn, soy sauce, butter, and garlic to the rice.
Cook both the rice and the sausage on the griddle, separately, for 5 to 6 minutes.
Mix the rice together and break up the chorizo with your spatulas a few times.
Then combine everything together on the griddle and add some hot sauce plus a little kosher salt and pepper.
Cook for a few more minutes on the griddle, laying the rice flat and pressing down with the spatula to create crispy rice.
Once the rice is cooked how you like, remove from the griddle and place it on the same tray used to carry the ingredients outside.
Serve this Chorizo Fried Rice griddle recipe with yum yum sauce, lime wedges to squeeze over top, and more hot sauce if you’d like đŸ™‚

Griddle Chorizo Fried Rice
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 6 to 8 cups cooked, cooled Jasmine rice
- 1 onion diced
- 2 jalapeno peppers seeds removed and diced
- 3 eggs
- 1 pound ground chorizo sausage
- 1 cup corn kernels (canned, fresh, or frozen)
- 1/2 cup soy sauce
- 5 to 6 cloves garlic minced
- 4 tablespoons butter
- hot sauce of choice
- kosher salt, pepper
- Optional: store bought yum yum sauce, lime wedges, extra hot sauce
Instructions
- Prepare all of the ingredients and put them on a tray to carry out to the griddle.
- Preheat the griddle to medium to medium high heat for a few minutes. Add some cooking oil, the rice, onion, jalapeno, and eggs. Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
- Add the chorizo to an empty side of the griddle. Add the corn, soy sauce, garlic, and butter to the rice. Cook the chorizo separately from the rice, but flip and mix both the rice and chorizo on the griddle for 5 to 6 minutes, then combine them together.
- Add some hot sauce, a little kosher salt, and pepper and cook another few minutes. Spread the rice thin on the griddle and press down with the spatulas for crispy rice. Remove the rice once it's cooked how you prefer.
- Serve with yum yum sauce, lime wedges to squeeze over top, and extra hot sauce if desired.
