Griddle Sweet and Spicy Goetta Sliders
These Blackstone sandwiches can be served as breakfast, brunch, dinner, or even a game day snack! This recipe for Griddle Sweet and Spicy Goetta Sliders is so fun!
Goetta is for sure a mid-west/ Cincinnati thing… so if you’ve never heard of it or can’t get it, just substitute sausage patties instead.
Anything on King’s Hawaiian Sweet Rolls or slider buns is always a hit.
How to make Griddle Sweet and Spicy Goetta Sliders
First slice the package of King’s Hawaiian Rolls in half to separate the top and bottom buns.
I find it best to use a large serrated bread knife for this.
Then put everything on a tray to easily carry to your Blackstone or flat top grill.
I have a pound of goetta cut into 4 slices, which was juuuuust the right size to cover the slider buns.
Plus some pepper jack cheese to add to the “spicy” part of this recipe.
Also some bacon, maple syrup, and hot sauce.
Preheat the griddle to medium low for a few minutes.
Then add some cooking oil along with the goetta slices and bacon.
Cook the goetta for 6 to 7 minutes per side, and it’s best not to flip before the 6 minute mark so the slices don’t fall apart as they are very delicate.
You can flip the bacon a few times and remove it from the griddle once it’s cooked how you like.
Place the slider buns, cut side down, on the griddle for a few seconds.
And drizzle some syrup and hot sauce on the goetta slices.
Then top the goetta with the pepper jack cheese slices.
Once the cheese is melted put the goetta on the bottoms slider bun and top with the bacon and more syrup and hot sauce.
FYI- the griddle was turned off for this part, or you can do this on a tray.
Place the top bun and your Griddle Sweet and Spicy Goetta Sliders are ready to be served 🙂
Napkins are a must for this sticky sweet and spicy treat!
I used the same serrated bread knife to cut them that I used to slice the rolls in half.
Cheese pulls are the BEST 🙂

Griddle Sweet and Spicy Goetta Sliders
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 pound goetta (cut into 4 to 8 slices, aiming for the same size as the bottom slider bun)
- 6 slices bacon
- maple syrup, hot sauce (to taste)
- 8 slices pepper jack cheese
- 1 12 pack King's Hawaiian Sweet Rolls (cut in half to separate top and bottom buns)
Instructions
- Preheat the griddle to medium low for a few minutes. Add some cooking oil, the goetta slices, and the bacon.
- Cook the goetta 6 to 7 minutes per side (best to not flip before the 6 minute mark so they don't fall apart) and cook the bacon, flipping a few times. Remove the bacon once it's cooked how you prefer.
- Once the goetta is cooked, drizzle some maple syrup and hot sauce over the slices, then add the cheese slices to the goetta. Place the sliders buns, cut side down on the griddle to warm and toast them.
- Assemble the sliders once the cheese is melted starting with the goetta/ cheese, bacon, a little more maple syrup and hot sauce, and add the top bun.
