Blackstone Korean Chicken Sliders

We had friends over and I really wanted to wow them, so I made these Blackstone Korean Chicken Sliders!

Mission accomplished 😉

Not only is this flat top griddle recipe stunning to look at, they are so flavorful and unique.

The secret weapon here is this Korean gochujang chili paste, which can be found in the Asian section of the store or our good friend Amazon.

How to make Blackstone Korean Chicken Sliders

First put some of the gochujang in a bowl along with soy sauce, honey, lime juice, and minced garlic.

And whisk until combined.

Add some of this mixture to a bag with 1 1/2 pounds of diced chicken thighs.

Massage the bag until the chicken is coated and marinate in the fridge.

The rest of the sauce will get mixed with mayo for a Korean spicy mayo.

Put 2 cups of slaw or some of a salad kit in a bowl, you could also add some kimchi.

And use tongs to toss it together with a few spoonfuls of the spicy mayo.

I did this right before heading out to my Blackstone griddle to cook the chicken.

Preheat your Blackstone to medium heat and add some cooking oil of choice along with the marinated chicken.

Cook the chicken for 8 to 9 minutes, mixing with spatulas a few times.

Now let me just say the chicken just like this would make for a fabulous meal dipped in the spicy mayo!

Scrape your griddle clean and then add a 12-pack of the King’s Hawaiian sweet rolls that have been sliced in half to separate the tops and bottoms.

I turned my griddle off as well.

Put the slider buns, cut side down on the griddle for a few seconds and flip bottom bun over.

Spread remaining spicy mayo on bottom bun.

Add the chicken and slaw, then place top bun and press down slightly.

Blackstone Korean Chicken Sliders are so fun to make on the flat top griddle, flavorful sliders on King's Hawaiian rolls for a recipe win!

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • 3 tablespoons gochujang chili paste (link to buy from Amazon in post above or Asian section of grocery store)
  • 3 tablespoons soy sauce
  • 5 cloves garlic minced
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1/2 cup mayo
  • 1 1/2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
  • 2 cups slaw (or mix from a salad kit)
  • 1/2 cup kimchi (optional)
  • cooking oil of choice
  • 1 12-pack King's Hawaiian Sweet Rolls cut in half to separate tops and bottoms

Instructions
 

  • Put the gochujang, soy sauce, garlic, honey, and lime juice in a bowl and whisk until combined.
  • Mix a few spoonfuls of this with the mayo, cover and refrigerate until ready to use to make the slaw. Put the chicken in a gallon size plastic bag and add the remaining gochujang mixture, toss until combined and marinate in the fridge.
  • Toss the slaw together with some of the spicy mayo mixture (save some to spread on the slider buns) and kimchi (if using) right before you begin cooking the chicken.
  • Preheat the griddle to medium. Add some cooking oil and the chicken. Cook 8 to 9 minutes, mixing with spatulas.
  • Turn griddle off and scrape clean. Put the slider buns, cut side down on the griddle for a few seconds and flip bottom bun over. Spread remaining spicy mayo on bottom bun, add chicken and slaw, then place top bun and press down slightly.
