Blackstone Ginger Peanut Chicken
Blackstone Ginger Peanut Chicken is a simple griddle recipe with only a few ingredients.
We are truly embracing our inner home cook and going with a few store bought sauces.
I am certainly not a chef, so no need to make sauces from scratch when my grocery store carries so many yummy options!
This dish could easily be made in a large skillet, but I love cooking outside on my griddle.
How to make Blackstone Ginger Peanut Chicken
Mess free marinating is another home cook hack, so put two pounds of diced chicken thighs into a gallon size plastic bag.
Then add some fresh minced garlic, 1/2 cup of ginger salad dressing, and 3 tablespoons soy sauce.
Massage the bag and marinate in the fridge preferably overnight.
But at least for a few hours.
Then preheat your griddle or flat top grill to medium for several minutes.
And add some cooking oil of choice along with the chicken bites.
Plus a small amount of kosher salt and pepper.
Cook the chicken for 6 to 7 minutes, mixing together with hibachi spatulas.
Then add about a cup of store bought peanut sauce.
And cook another minute or so, mixing together.
Serve Blackstone Ginger Peanut Chicken over cooked Jasmine rice 🙂
I added more peanut sauce to make it saucier, and also some sriracha for added spice.
Other additions that I highly recommend are lime wedges to squeeze over top.
And some chopped peanuts and cilantro.
This dish is SO flavorful and super easy, so hopefully it will become a new favorite.

Blackstone Ginger Peanut Chicken
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 pounds boneless, skinless chicken thighs (or breasts)
- 1/2 cup ginger salad dressing (I used Makoto)
- 3 tablespoons soy sauce
- 5 to 6 cloves garlic minced
- cooking oil of choice
- kosher salt, pepper
- 1 cup peanut sauce (Asian section of grocery store)
- Optional: cooked Jasmine rice, chopped peanuts, lime wedges, cilantro, sriracha, more peanut sauce
Instructions
- Cut the chicken into bite size pieces and place them in a gallon size plastic bag. Add the ginger salad dressing, soy sauce, and garlic. Massage the bag until combined and marinate in the fridge for a few hours or overnight.
- Preheat the griddle to medium for a few minutes. Add some cooking oil and the chicken plus a small amount of kosher salt and pepper. Cook 6 to 7 minutes, mixing together with hibachi spatulas. Add the peanut sauce and cook another minute or two, mixing together.
- Serve over rice if desired with chopped peanuts, lime wedges, cilantro, sriracha, and/or more peanut sauce.
