
Griddle Sausage and Potatoes Recipe
This Griddle Sausage and Potatoes recipe is another one of my complete meals on the Blackstone or flat top grill!
No side dishes to worry about, a slightly spicy Cajun style dinner recipe on the griddle that’s ready in minutes.
Super easy thanks to the frozen diced potatoes.
What’s not to love, am I right?!

How to make this Griddle Sausage and Potatoes recipe
First dice the veggies… an onion, red bell pepper, and jalapenos.
Also some green onions and garlic.
The potatoes couldn’t be easier, I just thawed those.
Dice a pound of andouille sausage, place it all on a tray, and head out to wherever your griddle lives.

Preheat your Blackstone griddle or flat top grill to medium heat for a few minutes.
Then add some cooking oil of choice, the potatoes, onion, and peppers.
And season with kosher salt, pepper, and Cajun seasoning.

Cook the veggies for 8 to 10 minutes, mixing together with hibachi spatulas a few times.

Then add the diced sausage, green onions, lime juice, hot sauce, and garlic.

And cook for 3 to 4 more minutes on the griddle.

Finally some shredded cheese gets mixed in and cook just until the cheese is melted.

Serve this Griddle Sausage and Potatoes recipe with sour cream over top 🙂

Taste for seasoning and add more kosher salt, pepper, and Cajun seasoning if needed.
We also added more hot sauce because, well… we are spice fanatics 😉

If you’re lucky enough to have some leftover it’s even better the next day!

Griddle Sausage and Potatoes Recipe
Equipment
- Flat Top Grill/ Griddle
- Blackstone Griddle
Ingredients
- cooking oil of choice
- 1 28 ounce bag frozen potatoes O'Brien (diced potatoes with peppers and onions) thawed
- 1 onion diced
- 1 red bell pepper diced
- 2 jalapeno peppers seeds removed and diced
- kosher salt, pepper, Cajun seasoning blend
- 5 to 6 cloves garlic minced
- 1 bunch green onions sliced
- 1 pound andouille sausage diced
- 2 tablespoons lime juice
- a few dashes Tabasco or cayenne pepper hot sauce
- 1 1/2 cups shredded cheese of choice
- 1 cup sour cream
Instructions
- Prepare all of the ingredients, put them on a tray, and carry out to the griddle.
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil, the potatoes, onion, red pepper, jalapenos, kosher salt, pepper, and Cajun seasoning. Cook 8 to 10 minutes on the griddle, mixing together with hibachi spatulas.
- Add the garlic, green onions, sausage, lime juice, and hot sauce. Cook another 3 to 4 minutes.
- Add the cheese, mixing together and cook another minute or until the cheese is melted.
- Taste for seasoning and add more kosher salt, pepper, and/or Cajun seasoning if needed. Serve with sour cream over top.
