
Blackstone Peanut Chicken Stir Fry
Blackstone Peanut Chicken Stir Fry is a fantastic griddle dinner recipe complete with yummy ramen noodles!
This is a specialty brand of ramen noodles, but regular ramen or any stir fry noodles will be perfect.
It’s slightly spicy thanks to the sriracha, super flavorful, and packed with healthy vegetables.

How to make Blackstone Peanut Chicken Stir Fry
First make the peanut sauce by combining 3/4 cup store-bought peanut sauce with some soy sauce, sriracha, rice vinegar or lime juice, minced garlic, and grated ginger.
Whisk together until combined.

Then boil the ramen or stir fry noodles according to the package directions, but do not use the flavor or sauce packet.
And rinse very well with cold water when draining so they don’t become mushy.

Place the sauce and noodles on a tray along with the stir fry veggies, 1 1/2 pounds diced chicken thighs, and the optional toppings of peanut and green onions if using.
I kept my life super simple by using a pre sliced stir fry veggie kit from the store with onions, carrots, broccoli, peppers, and snow peas.

Preheat your Blackstone griddle to medium heat.
Then add cooking oil of choice, the vegetables, kosher salt, and pepper.

Cook them for 2 minutes, mixing with spatulas.

Then add the chicken and some more kosher salt and pepper.

Mix this all together with spatulas for about 5 minutes.

I sure wish you could hear the sizzle from this picture!!

Finally add the cooked noodles and peanut sauce.

And mix just a few more minutes with spatulas, combining everything.

Top Blackstone Peanut Chicken Stir Fry with chopped peanuts and green onions if desired 🙂
I loved the crunch from the peanuts and pop of freshness from the green onions.

And yes, this does taste juuuuuust scrumptious as it looks!!

Blackstone Peanut Chicken Stir Fry
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 3/4 cup store-bought peanut sauce
- 3 tablespoons soy sauce
- 1 to 2 tablespoons sriracha
- 1 tablespoon rice vinegar or lime juice
- 6 cloves garlic minced
- 1/2 tablespoon grated ginger or ginger paste (optional)
- 2 (3.5-ounce) packages ramen or stir fry noodle (minus the seasoning or sauce packet)
- cooking oil of choice
- 1 (12-ounce) bag already sliced stir fry vegetables (my mix from the produce section had carrots, snow peas, broccoli, peppers, and onions)
- kosher salt, pepper
- 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- Optional toppings: green onions, chopped peanuts
Instructions
- Put the peanut sauce, soy sauce, sriracha, rice vinegar or lime juice, garlic, and ginger (if using) in a bowl. Stir until combined. Boil noodles according to package directions, drain, and rinse well with cold water.
- Preheat griddle to medium. Add cooking oil, stir fry veggies, kosher salt, and pepper. Cook 2 minutes, mixing with spatulas.
- Add chicken and a little more kosher salt and pepper. Cook 5 minutes, mixing together with the veggies.
- Add cooked noodles and peanut sauce. Mix together with spatulas for 3 more minutes. Garnish with green onions and chopped peanuts if desired.
