
Grilled Buffalo Chicken Thighs
This easy recipe for Grilled Buffalo Chicken Thighs is the perfect way to kick off grilling season!
You know, one of those first super nice spring days that just calls for grilling on the patio.
Simple grilled dinner recipes are the absolute BEST!
You could enjoy this slightly spicy grilled chicken dipped in ranch and more buffalo sauce.
Or use it to add to a buffalo chicken salad or wrap 🙂

How to make Grilled Buffalo Chicken Thighs
First put 4 to 6 boneless, skinless chicken thighs into a gallon size plastic bag for mess free marinating.
Then add 1/4 cup of your favorite buffalo wing sauce.
Also some pickle juice, which I admit seems a little strange.
But trust me, it brings that little somethin’ somethin’ to the recipe 😉

Next add some minced garlic, paprika, cayenne pepper, kosher salt, and pepper.
Massage the bag until the chicken is evenly coated in the marinade.
And keep it in the fridge for a few hours or overnight.

When you’re ready for dinner, preheat the grill to medium/ medium high heat for a few minutes.
And grill the chicken thighs for 10 to 12 minutes total, flipping a few times.

These really don’t need anything else, but dipping in more ranch and/or buffalo sauce wouldn’t be a bad thing.

Grilled Buffalo Chicken Thighs
Equipment
- Grill
Ingredients
- 4 to 6 boneless, skinless chicken thighs
- 4 to 5 cloves garlic minced
- 1/4 cup buffalo sauce
- 1 tablespoon pickle juice
- 1 tablespoon paprika
- 1/2 teaspoon cayenne pepper
- kosher salt, pepper
- Optional: more buffalo sauce, ranch
Instructions
- Put the chicken in a bowl or gallon size plastic bag. Add the garlic, buffalo sauce, pickle juice, paprika, cayenne pepper, kosher salt, and pepper.
- Mix together and marinate in the fridge for a few hours.
- Preheat your grill to medium/ medium high heat for a few minutes. Grill the chicken 10 to 12 minutes total, flipping a few times.
- Serve with more buffalo sauce and/or ranch for dipping.
